Food fraud is the supply of a product that does not meet the defined or agreed nature, composition or quality and that deceives the purchaser or consumer. However, it is not always a deliberate practice.

All unconscious routines in an agri-food industry deriving from improper practices related to supplier selection, management of raw materials, handling, production, training or information given to consumers, amongst others, can result in non authentic products being introduced onto the market, therefore constituting  fraud.
